Across more than 30 hours of multimedia learning material, you will explore everything about the origin, sensory analysis, tasting, and culinary presentation of premium waters. The course is based on the acclaimed specialist book The Colors of Water and goes far beyond it. Experience hands-on training, exclusive tastings with internationally acclaimed fine waters, and develop in-depth knowledge of water quality, mineralisation, and sustainable water consumption. Upon successful completion of the final examination, you will receive the certificate "Certified Water Sommelier – colors of water®".
This is not an off-the-shelf online course. This is the distilled knowledge of more than a decade of active work with water — curated by Pat Eckert: certified water sommelier, juror at international Fine Water Awards, author of The Colors of Water, and curator of the AQAPOLIS, the world's largest water bottle collection.
Course Overview
The 6 Modules
Module 1 — Foundations of Water What water is, where it comes from, and what it carries. The global water cycle, spring types, formation stories, mineralisation and composition — the foundation for everything that follows.
Module 2 — Sensory Analysis and Tasting Techniques What does water really taste like? Introduction to professional tasting systems, flavour, mouthfeel, and aroma profiles — with your own tasting materials for immediate practice.
Module 3 — The International World of Water From Norway to Slovenia, from Japan to Patagonia. Premium waters and their origins, regional characteristics, comparative studies between still and sparkling, soft and mineral-rich.
Module 4 — Water and Gastronomy Water as a serious table companion. Pairings with wine, beer, and spirits. The art of the water menu — from a simple selection to a multi-course accompaniment.
Module 5 — Sustainability and Responsibility Virtual water, ecological footprint, and ethical questions surrounding water as a global resource. Understanding water means taking responsibility.
Module 6 — Professional Application Consulting in gastronomy and hospitality, designing tastings and events, marketing water as a premium product. The direct path into professional practice.
Tasting Experience Included
Every programme includes a specially curated tasting box containing 18 international premium waters — personally selected by Pat Eckert and calibrated to the course content. Also included: the opportunity to participate in live tastings and a personal closing conversation.
