Spontaneously fermented, then dry hopped for a short period with US Simcoe hops, chosen for their wonderful aroma and flavour rather than any bitterness. Bottled with a little sugar and blackcurrant juice to induce not only a beautiful colour but a second fermentation in the bottle.
