TASTING NOTES

Nose:
Buttery vanilla, caramel, toasted coconut, honeyed grain, and soft orchard fruit with gentle oak spice.

Palate:
Full-bodied and smooth with layers of caramel, toffee, honey, and baked grain sweetness. Notes of orange peel, maple, and light baking spice add depth.

Finish:
Long and warm with lingering vanilla, soft oak, and gentle spice.

Preservation Distillery, located in Bardstown, Kentucky, is a family-owned craft distillery known for its innovative approach to bourbon production and commitment to sustainability.

Preservation Distillery was established in 2015 on a historic 40-acre tobacco farm in Bardstown, often referred to as the "Bourbon Capital of the World." The distillery is situated on a solid limestone bed, which is ideal for producing high-quality bourbon. The founders bring extensive experience from the bourbon industry, ensuring a deep understanding of the craft and a commitment to excellence in every bottle produced

The distillery employs traditional pot still distillation methods and focuses on small-batch production. This approach allows for unique flavor profiles and high-quality spirits. Preservation Distillery is also notable for being Kentucky's first sustainability-focused distillery, raising Bluegrass Longhorn cattle to consume spent grain and utilizing local ingredients and limestone water from their farm.

Preservation Distillery produces a range of whiskeys, including brands like Very Olde St. Nick, Pure Antique, Rare Perfection, and Wattie Boone. Visitors can taste and purchase rare vintage bottles at their reclaimed barnwood bar and gift shop. The distillery offers various tours and tasting experiences, allowing guests to explore the distillation process and sample their spirits

The distillery features a rustic visitor centre with a tasting bar, where guests can enjoy cocktails and relax on the patio overlooking the farm. Tours include tastings of their small-batch whiskeys, providing an immersive experience into the world of bourbon.
