Pork jowl, also known as Hangjeongsal in Korean cuisine, comes from the area between the pig’s neck and shoulder. It features a beautiful contrast of light pink meat and fine white marbling, earning it the nickname “pork brisket” for its flavor and texture, reminiscent of beef brisket or short plate.

While less common than pork belly, its superior marbling and unique chewy-tender texture make it a favorite among Korean BBQ lovers. Only 500g to 1kg can be sourced from each pig, making it a rare and premium cut. When grilled properly, the fat renders out, creating a crispy exterior and a juicy, flavorful bite.

Traditionally considered a secondary meat, pork jowl has since become a sought-after cut for roasting, braising, and grilling. It is also recognized in Korean culinary culture for its role in dishes like Hangjeong-guk (simmered with radish) and even makes appearances on cooking shows hosted by top chefs.
