70% Solomon Islands dark chocolate, single origin and smoked with Native Australian Paperbark.
I created this chocolate bar after learning about Paperbark and Native Australian Ingredients during my first restaurant job in Australia.
Paperbark has been used for thousands of years by Aboriginal Australians; They would wrap their food inside the Paperbark before cooking it over the fire, this will make sure their food would not burn but also will naturally have a smoky aroma.
To translate this cooking technique in my own chocolate making I choose to burn some paperbark and contaminate the air above the melted chocolate. In this way the chocolate will absorb the smoke and carry this unique flavor notes!
Ingredients: cocoa beans, sugar, cocoa butter.
