That subtlety is exactly why we reach for it when curing whole-muscle salumiCoppa, Lonza, Culatello, and similar projects where the pork + salt + time should be the headline.

Our preferred usage rates

  • Salami: 2.25–2.75% (based on meat weight), depending on your flavor preference

  • Large whole muscle (Prosciutto/Culatello): 3.0–3.25% (based on green weight)
