Zarza Coffee is a third-generation family business, run by the Gasca family, nestled in the Bruselas Mountains. The name Zarza symbolises unity and an unwavering commitment to excellence. Beyond coffee production, the family integrates beekeeping into its agricultural ecosystem, thus strengthening biodiversity and enhancing its land.

Since its inception in 2022, Zarza Coffee has perfected every step of production, from selective picking to managing fermentation and oxidation. 

This lot starts with selective hand picking of ripe cherries followed by a 24 hour controlled oxidation. The whole cherries are then placed with selected yeasts in airtight tanks at a controlled temperature. A thermal shock stabilizes the fermentation and preserves the aromatic compounds responsible for the honeyed sweetness and floral complexity.

The cherries are dried on raised marquesina beds for 20 to 30 days. This slow and even dehydration process preserves the delicate aromas and gives the coffee a clean, sweet flavour profile.
