The Wine

A brilliant and intense pale yellow colour, and flashes of lemon yellow deep in the glass. A lively stream of tiny bubbles forms a persistent crown. The overall appearance promises a fresh and nuanced wine.

The first impression on the nose is warm and mineral, evocative of lemon meringue, grapefruit, peach or pear jam, stewed quince. As the wine opens up it releases luscious, heady aromas of jasmine, honeysuckle, almonds, toast, apricot, plum, orange blossom, cherries, blackberries, wild strawberries, blackcurrant, figs, and pineapple. All this is highlighted by budding hints of cumin, liquorice and honey.

Immediately supple and fresh on the palate with a soft, creamy effervescence. Next, the champagne develops a fruitiness underpinned by fleshy fruit acidity. The mid-palate is orchestrated by a chalky minerality that brings boldness. On the tongue, the savoury dryness is balanced by the fruity maturity characteristic of this vintage. Everything culminates in a concentrated finish marked by persistent richness. Brut Réserve is both an approachable and generous champagne with great aromatic diversity. Exceptionally balanced and harmonious champagne of outstanding finesse and distinction.

Food Pairing recommendations

Apart from traditional pairings of seared fish dishes, the hot pot will be a more localised pairing option. The few grams of sugar from the dosage is a perfect counterbalance to the slight spiciness we often get from the self-made cauldron of soy sauce & co dipped on the side.
