The Land
Fruits for Quite are sourced from different vineyard plots throughout the village of Valtuille de Abajo, from 80-90 years old Mencía vines planted on clay and sandy soils (with rolling stones of slate and quartz) typical of the Bierzo region. Organic viticulture is carried out to ensure grapes of the highest quality.
Vinification
All grapes are destemmed before fermentation in stainless steel tanks. Only gentle work is done throughout fermentation to avoid over-extraction. Malolactic fermentation takes place in 228L French oak barrels and 800L amphora, aging for 8 months in the same vessels. Only soft filtering for big particles.
The Wine
Quite combines the minerality from the soils with the fruity character of the Mencía grape. As a result, a well-made rather traditional style Mencia, but with a twist where againg in amphorae gives extra complexity. A very fresh wine, easy to enjoy for a hot summer afternoon with family and friends.
